COLOMBIA - Gasca Brothers
Okay, everyone. We’re finishing the year strong with a double December drop and some alliteration to boot. Our first offering this month is a beautiful washed pink bourbon from the Gasca brothers in HuiIla, Colombia. Colombian coffee is a perennial favorite around Ghost, and pink bourbon is among our favorite varieties.
There’s a lot of words coming to mind as I sip this coffee, but elegance is the recurring theme. Everything about the cup feels balanced. The flavors begin with rose and a prominent dried strawberry that sticks around for the after taste as well. The acidity is medium intense and balanced on a razors edge between citric and malic. With cooling, the primary flavors shift to the stone fruit realm with peach at the forefront. The body starts silky, but evolves to sticky sweet with a lingering finish.
