It’s the second month in a row to feature Finca Villa Betulia and Luis Anibal Calderon. What’s the reason? We’re just in love with Finca Betulia coffee. This month we’re lucky to introduce this natural process caturron. The fermentation method used here is carbonic maceration. It’s a trick that the coffee industry has borrowed from wine makers. The ripe cherries are sealed in a tank which is purged with carbon dioxide. It’s technically a form of anaerobic fermentation, as the process occurs in an oxygen free environment. Not much is known about the caturron variety. Some say it’s a mutation of caturra, though we’re missing the genetic testing to confirm that.
This coffee feels appropriate for February. It’s a love bomb. The most striking thing about this coffee is the purple floral component. It’s on the nose and it’s the primary flavor note when the coffee is hot. The cup opens up substantially as it cools into the seductive world of dark fruits and chocolate. Overall the cup profile is clean with minimal funk. The black cherry and blackberry notes are intensely sweet and balanced with malic acidity. The body is syrupy with the weight of milk chocolate. Perfect for sharing some good times.
